Sterling Healthy Recipe:

Kale, Carrot, Coconut & Ginger Salad

Slice 1 bunch of black kale into 1″ strips and toss with
1 cup green beans cut to 1″,
4 fresh grated carrots,
grated fresh hunk of ginger,
seeds from 1 pomegranate,
1 cup unsweetened coconut,
1/2 cup dried currants,
1 container blueberries,
fresh squeezed juice from 1 orange and 2 limes,
drizzle with olive oil and
sprinkle w salt and pepper.

8 servings.  Best when marinated overnight.
After plated, sprinkle your favorite nuts on top.
Voila, superfood salad!
