Bean Salad

1 can garbanzo beans

1 can cannellini beans

1 can kidney beans

½ red onion, chopped

1 cup fresh parsley

1 cup fresh cilantro


1/3 cup apple cider vinegar

1/3 cup sugar

¼ cup olive oil

Salt and pepper to taste


Mix vinegar, oil, and sugar together and pour over beans/onion/parsley/cilantro! Yummy!

PS garbanzos (chickpeas) are in season in now (winter/fall).  I get lots and make humus out of them.
